Oatmeal Butterscotch Cookies
Ingredients
1 - 12 oz. bag of butterscotch chips
2 cups unbleached flour
1 ½ cups quick oats
2 tsp baking powder
1 tsp baking soda
1 tsp salt
½ cup margarine (softened)
½ cup unsalted butter (softened)
1 ½ cups brown sugar (firmly packed)
2 eggs
1 tbsp water
½ tsp orange extract

Instructions

Preheat oven to 375°

Beat together margarine, butter, brown sugar, eggs and water.

Combine dry ingredients.

Add dry ingredients gradually to beaten mixture.

Stir in quick oats until completely incorporated.

Stir in butterscotch chips until completely incorporated.

Add orange extract.

Using a 1 1/2 tablespoon cookie scoop, drop onto a parchment lined cookie sheet.

Bake for 10-12 minutes. (For best baking results, let each cookie sheet cool slightly before dropping the next batch.)
