Haluski (Fried Cabbage & Noodles)

Haluski (Fried Cabbage & Noodles)

Fried Cabbage and Noodles (Haluski), fried with onions in butter is pure down home comfort food.

  • 1 small head of cored cabbage, thinly sliced or shredded
  • 8 ozs wide egg noodles, cooked
  • 2 medium onions, sliced
  • 5 tbsps salted butter, divided
  • 1 tbsp canola oil
  • 3 tbsps water
  • Salt and pepper (to taste)
  • A dash or two of sweet paprika

  1. 1. Heat a large, deep frying pan over medium heat. Add 3 tablespoons of butter and 1 tablespoon of oil. Add onions and cook for 7-10 minutes or until they begin to soften and become lightly golden brown.
  2. 2. Add cabbage to the onions and toss to combine. Add 3 tablespoons of water to the pan, reduce to medium low, and cover with a lid. Allow mixture to simmer for 10-15 minutes (or until cabbage is tender). Stir occasionally.
  3. 3. Remove lid from pan, stir in the remaining 2 tablespoons of butter, then toss cooked egg noodles with onions and cabbage. Turn heat up to medium and allow everything to cook together for 7-10 minutes, giving everything a toss frequently. Be sure to adjust the heat so that the cabbage and noodles get slightly crispy in places, but so that it does not burn. If the pan seems a bit dry, you may add a few more tablespoons of butter, or a little bit of water or reserved cooking liquid.
  4. 4. Remove pan from the heat and season to your taste with salt and pepper. Garnish with several dashes of paprika before serving.
