Baked Potato Soup

A hearty soup for those cool days ahead.


Ingredients:

  • 4 large baking potatoes (about 2 and 3/4 pounds)
  • ⅔ cup butter or margarine
  • ⅔ cup all-purpose flour
  • 1 ¾ tsps salt
  • ¼ tsp white pepper
  • cayenne pepper, a dash
  • 6 cups milk
  • 1 cup sour cream
  • ¼ cup thinly sliced green onions (optional)
  • 10 bacon strips, cooked and crumbled
  • 1 cup shredded cheddar cheese

Directions:

  1. Bake potatoes at 350 degrees for 65-75 minutes or until tender; cool completely. Peel and cube potatoes.
  2. In a large saucepan, melt butter; stir in flour, cayenne, salt and pepper until smooth.
  3. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; whisk in sour cream.
  4. Add potatoes and green onions. Garnish with bacon and cheese.
  5. Yield: 10 servings
